And I bought some at the WAPF convention from a farm in Virginia just outside Washington! Cooking takes time. Convergentsum's suggestion looks yummy, but long-cooked means 36-48 hours. (If you are very highly sensitive to MSG start with shorter cooking, as more of the natural glutamates come out later in cooking. If you want to get fancy you can (eg. spices [maybe star anise, garlic, cinnamon], red wine etc.), but this isn't cooking, it's magic so it can't go wrong. The only thing that needs to happen for this to be delicious is the meat's collagen (connective tissue) to soften, and for that to happen the meat wants to reach 130F or so, and remain at that temperature for a long time.
